Checking e-mail from two computers

Is it possible to setup Outlook 2003 to not 'steal' emails from the server?
Meaning, if I open up my desktop, Send/Receive and get all of the new shiny
emails from the server, if I open up my laptop and do the same thing, I won't
be able to get those same emails.

You have to set Outlook on your Primary PC to leave a copy on the server.
Sending mail will only be on the PC you send from however
