How do I customize the "From Box" in outlook so that when received it shows
in someone's inbox as "David Snell, Esq" instead of dsnell[ at ]abc.com?

Edit your display name in your email account properties (you need to ask your admin to change it if you use Exchange server.)

Note that if the recipient's email client uses the email address instead of the display name you can't control it. -- Diane Poremsky [MVP - Outlook]
