Installing Office 2007 from disk 1 won't prompt you for disk 2, that's normal. FYI, assuming it's a genuine Microsoft Office DVD (not a customized disk), Disc 2 has two optional programs that you may not need; Office Accounting 2007 Express and Business Contact Manager for Outlook 2007. Business Contact Manager for Outlook installs SQL Server Express which will take additional hard disk space and memory so I don't recommend installing it if you don't need it.
Overviews of those two programs are here if you are not sure if you need them and want to read more: Office Accounting 2007 http://office.microsoft.com/en-us/accounting/HA103350091033.aspx Business Contact Manager for Outlook 2007 http://office.microsoft.com/en-us/contactmanager/HA101656361033.aspx
From reading your message I'm not sure if disk 1 installed successfully and if Word, Excel, Powerpoint, etc... all start successfully. If those start successfully and you don't need the disk 2 programs then I wouldn't worry about disk 2.
If you do need the disk 2 programs installed, we do have an article on troubleshooting setup problems when installing from the CD/DVDs for Office 2007. See http://support.microsoft.com/kb/924619. And as the article says:
